Ingredients

  • Grilled Salmon

  • Leafy Greens (Spinach or Kale)

  • Avocado

  • Cherry Tomatoes

  • Lemon Vinaigrette

Directions

  • Preheat the grill to medium-high heat. Season the salmon with salt, pepper, and your preferred spices. Grill the salmon for 4-5 minutes per side or until cooked through.
  • Wash and dry the leafy greens. Tear them into bite-sized pieces.
  • Cut the avocado in half and remove the pit. Scoop out the flesh and slice it.
  • Wash the cherry tomatoes. Cut them in half.
  • Rinse the quinoa under cold water. Cook according to package instructions.
  • In a small bowl, whisk together lemon juice, olive oil, honey, salt, and pepper.
